A Japanese-affiliated restaurant company is seeking an experienced Operations Chef to lead Back-of-House culinary operations for its growing U.S. business. This position will oversee food quality, production, food safety, cost control, and team development across kitchen operations, including artisanal pizza and in-house cheese production. The role is responsible for establishing consistent operational standards, developing a high-performing BOH organization, and partnering with restaurant leadership and culinary development teams to support menu execution. The position will also help build scalable kitchen processes and operating standards that can support future U.S. expansion.

Responsibilities and Duties
- Lead all Back-of-House culinary operations, ensuring consistent food quality, production standards, food safety, and service readiness.
- Oversee pizza and dough production, in-house cheese preparation, kitchen workflow, batch planning, yields, waste tracking, and production capacity.
- Manage and develop kitchen leadership and cheese production teams through hands-on coaching, training, performance assessment, and clear operating standards.
- Ensure compliance with U.S. food safety requirements and local health regulations while maintaining strong internal quality-control practices.
- Manage inventory, ordering, supplier coordination, food costs, portion control, and waste reduction to support efficient and disciplined kitchen operations.
- Collaborate with restaurant leadership and culinary development teams on menu rollouts, operational improvements, and scalable kitchen processes for future business expansion.
Qualifications
- 4–6+ years of culinary leadership experience at the Sous Chef level or above.
- Strong experience in pizza, Italian cuisine, Japanese-Italian fusion, premium casual dining, or a closely related culinary environment.
- Demonstrated experience leading BOH operations, managing kitchen teams, and developing employees in a high-volume or quality-focused foodservice environment.
- Experience with inventory management, supplier coordination, production planning, food cost control, and waste management.
- Strong knowledge of U.S. food safety requirements; ServSafe certification or equivalent knowledge is preferred.
- Experience with cheese-making or other artisanal food production is a strong plus; conversational to advanced English communication skills required.Japanese language skills are preferred.
